This is the most prestigious way to create sparkling wine. It involves a Second fermentation inside the bottle, capturing natural CO₂ and creating fine bubbles; and Ageing on lees (spent yeast) develops complex aromas and texture.
Cava comes from Catalonia in northeastern Spain, crafted mainly from native grape varieties: Xarello, Macabeo, and Parellada, thriving in Mediterranean soils and climate, by organic farming methods.
