Why Serving Temperature Matters for Cava

Cava is alive with detail. Chill it too much and you mute its voice; serve it too warm and you lose its structure. With proper temperature everything aligns: fruit, acidity, mousse, and minerality.

Most sparkling wines suggest a serving temperature of 6–8 °C, this recommendation you often see on back labels, in online shops and retail. And that’s the typical fridge-exit temperature. With Cavas Ronïs, we recommend letting it warm slightly in the glass. To enjoy the full bouquet and flavour complexity of premium Spanish sparkling wine, aim to start serving at 8–10 °C. When you pour 8 -10 °C Cava into a room-temperature glass, it warms up quickly to around 12-14 °C — right in the range where its aromas, textures, and complexity start to fully express themselves.

How to Serve Cava Properly

  • Chill ahead of time. Place the bottle in the fridge about 1 hour before serving to reach 6–8 °C (typical fridge-exit temperature).
  • Take it out 15 minutes before pouring. This brings the wine to a starting temperature of 8–10 °C, perfect for unlocking aroma and balance.
  • Keep it cool between pours. Store the bottle in an ice-water bucket or wine cooler to maintain freshness.
  • Pour modestly. Serve in small amounts, so each glass gently warms while you enjoy it.
  • Let it open up. In the glass, the temperature will naturally rise to 12–14 °C — the sweet spot where Cava truly reveals its layers: fruit, citrus, brioche, almond, and minerality.

How to Store Cava at Home

Cava isn’t made to age after disgorgement; the patient work has already been done for you. But Cava could improve in a bottle from months of proper storage. At RONÏS, our Brut and Brut Nature spent at least 12 months on the lees, while our Brut Reserva rested 18 months and our Brut Nature Reserva a full 24 months in the cellar at 12–14 °C. Where exactly? 8–12 meters underground, protected from light, movement and noise.

Once it’s in your hands, just keep it safe:    

  • Avoid direct sunlight, it ruins wine fast.
  • Minimise temperature swings. Do not freeze or heat much above 25°C.          
  • Ideally store of about 12-15 °C. It is best to keep Cava in a wine fridge or cellar, but at least at room temperature and in a dark place.
  • Let it rest. Don’t shake or move it unnecessarily.
